食品の健康効果に関する機能化学
Beneficial health effects of food with relation to functional chemistry
本講義では、食品成分の化学構造と生理機能の相互関係の基礎知識を習得する。また、食品の加工と保存による変化の化学と健康への影響に関する理解を深める。
This course provides basic knowledge on the relationship between the chemical structures and physiological functions of food components. Students will deepen their understanding of the chemical changes during the processing and preservation of foods as well as their effects on health.

The purpose of this course is to help students learn basic knowledge of chemical structures and health functions of food constituents and acquire preliminary knowledge on industrial applications of bioactive food components.

1. 機能分子解析学の概要紹介
Overview of food and biodynamic chemistry
期末試験とプレゼンテーションの参加状況で評価する。履修者全体の上位10％程度を「ＡＡ」とし、次に優秀な20％程度を「Ａ」とする。
Students will be evaluated comprehensively based on the final examination and group presentations. Grade AA is given to the top 10% of students and Grade A is given to the next 20%.
